Quinoa, Cranberry and walnut Salad With Ume Plum Vinaigrette

A lovely light salad with delicious flavour!

Ingredients

  • 3 c Quinoa (I use a mix of brown and white)

  • 2 c chopped parsley

  • 2 c toasted walnuts

  • 1 c dried cranberries

  • 2 c spring onions chopped

  • Cracked Black pepper

Dressing

  • 80ml olive Oil

  • 40ml sesame oil

  • 40ml ume plum vinegar

  • 20ml rice wine vinegar

  • 60ml pomegranate molasses

Method

  1. Mix all the salad ingredients in a bowl

  2. Shake all the dressing ingredients in a jar

  3. Add together and serve.
