STELLINE PASTA SALAD

This salad is a RedKitchen staple, and a crowd pleaser. The flower shaped pasta is a little bit different and the poppy seeds just seem to nestle in the middle. We borrowed this recipe from Zarbo in Auckland and made it better.

Ingredients

1 cup Stelline pasta

1 tbsp turmeric

1/2 cup currants

3 tbsp sesame seeds

1/4 cup pinenuts

2 tsp cumin seeds

2 tbsp poppy seeds

1/2 red capsicum, seeds removed, finely diced

1 green capsicum, seeds removed, finely diced

1 cup parsley, finely chopped

Dressing

3/4 cup RedKitchen’s Cider Vinaigrette

1 tsp curry powder

1/2 tsp Salt

Method

1. Mix Turmeric into a pot of cold water, bring to the

boil and add the Stelline, cook, drain and cool

2. Toast the sesame seeds, pinenuts and cumin seeds

until golden brown

3. Mix all the dressing ingredients to the pasta

4. Add remaining salad ingredients including toasted

seeds. Fold through.

5. Ready to serve
